ABOUT THE COFFEE

Another Neumann microphone, the M49. This coffee consists of 3 origins - Brazil, India and Indonesia.


Like our U47 blend, M49 has been awarded 5 times; 3 times at the international level with it’s most recent coming through last year at The Golden Bean Awards for both espresso and milk categories.
M49 is another great all rounder, though we find it most suited to commercial espresso applications. It’s flavour profile is rich and bold with lower acids, a full body with dark chocolate, roasted peanuts and caramel flavours. It’s finish is long and toffee sweet.

    M49 is best brewed as espresso using the following recipe of dose, yield and time.


    1:2 brew ratio (20g in for 40g out) over 28-30 seconds.This is more inline with contemporary espresso techniques and allows M49 to showcase it’s boldness.

  • For Filter

    M49 is best brewed as a filter using the following recipe.


    1:16 brew ratio (15g in for roughly 250g out)

  • For Cold Brew

    M49 is best brewed as a cold brew using the following recipe.


    1:16 brew ratio (140g in for 1L out)
